protein breakfast biscuits for easier mornings!

i have been loving meal prepping since the new year! every sunday morning i spend a couple hours prepping different foods for the week to make my days simpler! i have been trying to find a breakfast biscuit that would be easily warmed & still have some solid protein & these come in at almost 13g of protein per biscuit!

here’s what ya need:

1 cup kodiak protein pancake mix (could sub almond flour but will lower the protein!)

4 eggs

1 cup cottage cheese (blend it ahead of adding it if you don’t love the texture, but you cannot taste it at all!)

1/4 cup milk

4 chicken sausage links (could sub other meats!)

1/2 cup shredded cheddar

salt, pepper & garlic to taste!

here’s how ya make it:

simply add the eggs to a large bowl & whisk until smooth! add the cottage cheese & milk then whisk again! add the pancake mix, cheddar & chicken sausages with desired seasonings then mix again! add milk to desired consistency (you want it similar to cake batter - 1/4 cup worked best for me!)

add the batter to muffin tin (lined or sprayed) about 3/4 full then bake on 350 for 18-20 minutes! i stored ours in a gallon baggie in the fridge & eat 2 each morning!
